HOMEMADE GINGERBREAD CHAI LATTE
SERVES: 2
WHAT YOU WILL NEED:
- 2 Perfect Tea Spoons of Gingerbread Chai
- 300ml hot water
- 100ml milk
- Raw Honey
- Cinnamon
WHAT TO DO:
- Brew your Gingerbread Chai in the boiling water for at least 5 minutes, you can leave longer if you wish.
- Add 2 tsp of honey to 100ml of milk, gently heating and frothing.
- Add your milk to your tea, stirring as you go and ensuring you get a nice big dollop of frothy milk on the top.
- Sprinkle with cinnamon, or your choice of topping and enjoy!

Chocolate digestive cheese cake
Serves: 4
WHAT YOU WILL NEED:
- 4 Perfect Tea Spoons of Chocolate Digestives tea
- 100g of crushed chocolate digestive biscuits
- 50g of demerara sugar
- 50g of melted, unsalted butter
- 500g cream cheese (I used full fat, but low fat would work fine)
- 100g of icing sugar
- 1 sliced vanilla pod
- 200ml lightly whipped double cream
- 1 tsp cinnamon
- 1 bag of crushed chocolate buttons
WHAT TO DO:
- Smash 100g of chocolate digestive biscuits in a sandwich bag with a rolling pin until they're finely crushed.
- Mix the crushed biscuit together with melted butter and demerara sugar.
- Spoon the mixture into a lined baking tin & press down using a metal spoon to even the base, then put in the fridge to set for about 45 minutes.
- On a low heat, heat up the double cream to a fairly low heat, then add the loose tea and vanilla pod. Let it stay on a low heat for about 5 minutes, then allow to sit and brew for a further 5 minutes.
- Mix together the cream cheese and icing sugar.
- Strain the tea and vanilla out of the cream and then fold the cream into the cream cheese mixture, making sure it's all mixed thoroughly.
- Spoon the cream cheese mixture onto the base and allow to set in the fridge for approx. 1 hour.
- Sprinkle the crushed chocolate buttons over the cheesecake. Enjoy!

Rhubarb, Custard & Ginger Iced Tea
WHAT YOU WILL NEED:
- 1 Perfect Tea Spoons of Rhubarb & Custard Tea
- 25ml Brighton Gin
- 15ml Ginger Liqueur
WHAT TO DO:
- First, put 1 Perfect Teaspoon of Bird & Blend Tea into a cup with hot water, and alllow to infuse for 4 minutes.
- Once infused, remove the tea leaves or tea bag and leave to cool.
- Next, fill a glass with crushed ice and add the Brighton Gin, syrup and/ or liqueur to the glass. Stir in a circular motion!
- Now, top the cocktail with cool tea- filling the glass to the top!
- Finally, to impress your friends, garnish with fruit and a straw.
- Enjoy! Remember to drink responsibly...

Bannana Bread chai loaf
WHAT YOU WILL NEED:
- 5 Perfect Tea Spoons of your chosen Chai (Why not try a Mocha Chai Loaf?)
- 300g plain flour
- 1/2 tsp bicarbonate soda
- 125g margarine
- 250g caster sugar
- 1 egg
- 5 mushy bananas
- 200ml milk
- 1 tsp vanilla extract
WHAT TO DO:
1. First of all, preheat your oven to 180°C/Gas 4.
2. Get together your margarine and sugar and cream together in a bowl - I do this by hand with a wooden spoon as I don't have a magi-mix thing-y bob-y!
3. Heat the milk in a saucepan over a medium heat and add the Chai, slowly bring to the boil, but don't actually let it boil! This will take about 6 - 8 minutes. Keep stirring throughout and your milk should end up a lovely brewed colour. Pour your milk through an infuser like item or sieve to filter out the loose tea, then let your milky tea cool.
4. Whilst your milk is cooling, roughly mash your bananas- making sure to keep it a little chunky.
5. Going back to your bowl of creamy margarine and sugar, add your egg, vanilla extract, mushy bananas and cooled milk and leave it to one side. Now grab half of your flour and bicarbonate of soda and sift into the same bowl, then fold into the mixture carefully. Once the mixture is fully mixed, sieve in the other half of flour and fold in again.
6. Grease your loaf or cake tin with margarine and pour in the mix. Set your oven timer for an hour, but keep your eyes on it - you want a lovely golden-brown colour and for your knife to come out clean when you test it.
7. Cool, serve and enjoy!
After a few days (if it has lasted that long) your loaf will go a little harder, but then it is great for toasting- serve with a generous spread of salted butter and a cup of tea. Bliss!
You could even dip it into honey, just like soldiers and eggs.

Snowball TEA-lini
WHAT YOU WILL NEED:
- 4 Perfect Teaspoons of Snowball tea (or two tea bags)
- 300ml 100° water
- 100ml milk of your choice, we recommend coconut
- Few drops of vanilla essence
- Ice
- Optional: Malibu (you can also use Kahlua or Baileys!)
WHAT TO DO:
- Brew your Snowball tea in 100° for 4 minutes, being careful not to over steep the black tea leaves as they will taste bitter.
- When your tea has brewed, strain it and add a few drops of vanilla essence or a teaspoon of honey (or whatever sweetener you are using) and give it a good stir.
- Next, pour the tea into a glass filled with a handful of ice. Top up the tea with 100ml of a milk of your choice (we like coconut) and give it another stir.
- Add a shot measure of your favourite Christmas spirit (optional!)
- Sprinkle with cocoa powder or coconut and enjoy!

Mulled Cider Tea steamer
Serves: 4
WHAT YOU WILL NEED:
- 4 Perfect Teaspoons of Mulled Cider tea
- 100ml hot water
- 200ml apple juice
- Slices of apple
- Cinnamon stick
- 25ml of brandy or rum if wanting to make boozy!
WHAT TO DO:
- The first thing you want to do is take 4 Perfect Tea Spoons of Mulled Cider tea and brew in 100ml of water for 4 minutes. We use our Brewdini Gravity Steepers as they work perfectly to infuse and strain!
- Whilst your tea is brewing, cut up some apple into thin slices which will be used to put in your steamer when it's done!
- When the tea has brewed you can strain the tea into a jug and add 200ml of apple juice and the cinnamon stick.
- If you have a steamer, then steam away for about 20 seconds, if not, pop in a pan on the hob and leave the ingredients to infuse over a low heat for 5 minutes.
- Add your shot of alcohol at this point, but be careful not to over heat!
- Split it into 4 mugs and share with your nearest and dearest by a crackling fire!

Peppermint hot cocoa latte
WHAT YOU WILL NEED:
- 1x Peppermint Hot Cocoa mega-latte
How to use it:
- Brew the tea bag in 150ml of hot water and then fill the rest of the cup with your fave choice of hot & frothy milk!
- Add Only Coco's Peppermint Hot Cocoa tea infused chocolate stirrer!
- Swirl around the cup until the creamy chocolate has melted.
- Then add whipped cream and candy cane for extra Christmas sparkle!
